There are certain dishes that I eat when I’m out that for whatever reason I assume I can’t make as well at home. Don’t expect logic here, it’s just my weird thing. Carrot Ginger Soup is one of those dishes. But then there was that day that I needed carrots and all the store had was a 5 lb. bag, so I found myself trying to figure out what to do with all those carrots. Yes, I could feed them to the horses, but a quick Google search led me to give this Carrot Ginger Soup recipe a try. Guess what? It was amaze-balls! There’s one dish off that list of items I can only enjoy when eating out.
It’s quick, easy, healthy, and soooo good.
Quick tip: If you want to add some protein to it, just toss in a can of white (cannellini) beans at the end of cooking and before you puree the soup.
